Being healthy is a person’s most basic right and need. Food products are one of the factors that can most easily affect our health. For this reason, the safety of food products is an absolute demand of the consumer who uses the product and is the sole responsibility of the management in manufacturing companies. Therefore, according to quality system terminology, food safety should be viewed as an absolute and unchangeable quality criterion. A manager should establish, maintain and support the Food Safety Control System if he/she wants his/her business to continuously produce in accordance with hygiene standards and to ensure that every batch of products he/she produces and sells is safe. Given the fact that only a very small proportion of products can be analyzed, it is important to recognize that a continuous analysis system alone does not provide complete assurance. For this reason, there is a need for Hazard Analysis and Critical Control Points (HACCP, Hazard Analysis ana Critical Control Points), a preventive method that deals with all process stages in a more systematic way. Food Safety, which is one of the most important issues in the integration with the European Union, also appears in the audits of official institutions such as the Ministry of Agriculture and in the Food Codex requests to include approximately all the requirements of this standard.
